Try this yummy bowl of pasta next time you’re looking to change up your lunch or dinner. Orgran Buckwheat pasta is a vegan, dairy free, egg free and gluten free product!

You can amend this recipe for kids by using plain tuna instead of chili, helping to ensure they meet their vegetable requirements for the day, great for fussy eaters as the veg is almost hidden 🙂

INGREDIENTS

1 serve of buckwheat pasta (I use orgran buckwheat spirals)

1 x 95g tin of chili tuna

1/2 a zucchini 6 cherry tomatoes

1 clove of garlic

1 tbsp of extra virgin olive oil

1/2 a lemon

Salt and pepper

Parmesan cheese

RECIPE

Cook the pasta on the stove and drain the water out, leaving the pasta in the saucepan so you can add the other ingredients Drizzle the olive oil over the pasta and toss through the pasta so it’s evenly coating it Mince the clove of garlic in and pour in the tin of tuna with its chili and oil (mmm spicy) Cut the cherry tomatoes in half and grate the zucchini and add them both to the saucepan Juice the lemon half and pour the juice in to the saucepan Place the saucepan on a low flame for 1-2minutes whilst stirring to mix the ingredients and heat evenly. Serve in a bowl with salt, pepper and a shaving of Parmesan!

TIPS

**If you want to make the recipe for more people then just multiply the recipe by the amount of people you are cooking for 🙂

**Garlic is such a pungent herb and really kicks through in this recipe. It’s a favourite flavour of mine which is why love this pasta recipe so much! Not to mention Garlic has powerful antibiotic and immune strengthening properties, making this pasta even better! Use half a clove per portion if you don’t like such a strong flavour 🙂

**You don’t have to use chili tuna however, be sure to use a plain or subtle flavour like olive oil, lemon and pepper or simply brine if substituting
