With the morning off today I really wanted to make a good quality and nourishing breakfast. So when I woke up this morning I decided to cook some eggs. We have haloumi cheese in the fridge as well so I had to have some of that.

This literally took me 10 minutes to make!- very easy and very tasty (:

Boil 2 eggs on the stove top so they’re runny (6 mins if they’re at room temperature, 7-8 from the fridge)

Whilst they are boiling slice up 1 carrot, 1/2 a green capsicum and 3 big leaves of silver beet/kale/spinach so they can be tossed together roughly.

Place the sliced vegetables in a saucepan with 1cm water and 1 clove of garlic minced – put these over heat so they begin to steam

Slice 4 5mm thick slices of haloumi and place in a pan over low/ medium heat until browned on both sides.

While the haloumi and vegetables were cooking i shelled the boiled eggs by running them under cold water and smashing and peeling away the shell, then i rolled them in some dukkah – a yummy spice mix.

Put the vegetables in a bowl and put the eggs and haloumi on top. Sprinkle with some chili seeds and a generous splash of EVOO and enjoy!

This breakfast contains good quality fibre, protein and is packed full of vitamins and minerals to keep you on point all day. Breakfast is so important to establish your energy and focus for the day ahead.

You can double quantities to make it for the family or could even pack it and take to work for lunch
